GRILLED CHEESY BRUSCHETTA CHICKEN SKEWERS

    • 1 ½ - 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces (4 breasts) 
    • ¼ cup olive oil 
    • 1 tablespoon balsamic vinegar 
    • 2 garlic cloves, minced 
    • 1 teaspoon Italian seasoning 
    • ½ teaspoon salt 
    • ¼ teaspoon black pepper 
    • 4-6 ounces Meister Bruschetta Jack, shredded

    • 3 Roma tomatoes, diced 
    • 2 tablespoons chopped fresh basil 
    • 1 garlic clove, minced 
    • 1 tablespoon olive oil 
    • ½ tablespoon balsamic vinegar 
    • ¼ teaspoon salt 
    • Fresh cracked pepper

    • Sourdough bread or baguette, sliced (optional) 
    • Olive oil 

    Directions

    1. In a large bowl, toss together the chicken, olive oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper. Cover and refrigerate for at least 1 hour or overnight.

    2. If using wooden skewers, soak them in water for at least 30 minutes.

    3. Right before grilling, make the bruschetta. In a bowl, stir together the tomatoes, basil, garlic, olive oil, salt, and pepper. Set aside to allow the flavors to meld together.

    4. Preheat the grill to medium-high heat and thread the marinated chicken onto skewers.

    5. Grill the skewers for 10-12 minutes, turning halfway through, until the chicken reaches an internal temperature of 165°F.

    6. During the last 1-2 minutes of cooking, sprinkle the Bruschetta Jack cheese over the chicken. Close the lid and cook just until melted.

    7. Remove from the grill and let them rest for a few minutes while you toast the sourdough.

    8. Lightly brush both sides of the sourdough with olive oil and grill for 1-2 minutes per side, until lightly toasted.

    9. To finish, top the chicken skewers with the bruschetta mixture and drizzle with balsamic glaze. Serve with toasted sourdough for scooping up all the fresh bruschetta and melty cheese.
