SWEET AND SPICY PINEAPPLE BURGER

Ingredients

    • 1 pound ground beef 
    • Salt and pepper, to taste 
    • 4-6 ounces Meister Banana Pepper Jack, shredded

    • -8 slices fresh pineapple, skin removed 
    • ½ medium red onion, sliced into rings 
    • Olive or avocado oil, for grilling 
    • Brioche buns 
    • Lettuce 
    • Hot or mild banana pepper rings

    • ½ cup mayo 
    • 2-3 teaspoons sriracha (or to taste) 
    • 2 teaspoons banana pepper brine (or lemon or lime juice) 
    • ¼ teaspoon smoked paprika (optional) 
    • Pinch of salt 

    Directions

    1. Preheat the grill to medium-high heat.

    2. Make the spicy mayo. In a small bowl, stir together the mayo, sriracha, banana pepper brine, smoked paprika, and salt. Refrigerate until ready to use.

    3. Divide the ground beef into 4 equal patties and season both sides generously with salt and pepper. Refrigerate until ready to grill.

    4. Lightly brush the pineapple slices and red onion with oil. Grill for 2-3 minutes per side, or until grill marks appear and the pineapple and onion have softened. Transfer to a plate. Once the pineapple is cool enough to handle, cut out and discard the tough core from each ring. The pineapple slices tend to fall apart if the core is removed beforehand.

    5. Place the burger patties on the grill and cook for about 4-5 minutes per side, or until they reach your desired doneness. Add the cheese during the last 1-2 minutes of cooking.

    6. To toast the buns, place the buns cut-side down on the grill for 30-60 seconds, until lightly toasted.

    7. Assemble the burgers. Spread the spicy mayo on the buns, then layer with lettuce, burger patty, grilled pineapple, grilled onion, and banana pepper rings.
