
Grilled Brat & Veggie Kabobs with Havarti Cheese

These grilled bratwurst and vegetable kabobs are an easy summer grilling recipe featuring juicy Wisconsin bratwurst, zucchini, yellow squash, mushrooms and red peppers, all topped with melty Meister Havarti cheese. They're a fun new twist on a Wisconsin classic and perfect for backyard cookouts, summer parties and grilling season.
5 fully cooked bratwursts, cut into 1½-inch pieces
20 grape tomatoes
1 yellow squash, sliced into thick rounds
2 peppers (red, yellow, orange), cut into 1-inch pieces
8 oz whole mushrooms
8 oz Meister Havarti, sliced (or shredded for easier melting)
Wooden or metal skewers
¼ cup olive oil
2 tbsp balsamic vinegar
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp onion powder
½ tsp smoked paprika
Salt and freshly cracked black pepper
In a large bowl, whisk together the olive oil, balsamic vinegar, garlic, Italian seasoning, onion powder, smoked paprika, salt and pepper. Add the zucchini, squash, mushrooms and red peppers and toss until evenly coated. Let marinate for 20–30 minutes.
Assemble the kabobs.
Alternate brat pieces with the marinated vegetables on each skewer.
Preheat the grill to medium-high heat and add the brats when hot.
Baste the veggies with marinade mixture, 2-3 times.
Turn kabobs every few minutes until the vegetables are tender and lightly charred and the bratwurst is heated through.
Grill the kabobs for 10–12 minutes.
While the kabobs are grilling, shred your cheese.
During the last 1–2 minutes of grilling, sprinkle with shredded Havarti over the kabobs. Close the grill lid and let the cheese melt until warm, gooey and irresistible.
