A hard cheese with an earthy and nutty taste. Full-flavored with a bit more texture. As aging progresses, the flavor and texture increases.

Pairs well with: Cabernet, Chardonnay, Merlot, Pinot Gris, Pinot Noir, Sauvignon Blanc, Syrah and Zinfandels.
