1 cup (4 oz) Meister Monterey Jack cheese, freshly shredded
1 cup (4 oz) Meister Pepper Jack cheese, freshly shredded
1 cup (4 oz) Meister Banana Pepper Jack cheese, freshly shredded
1 cup (12 oz can) Evaporated milk
1 can (4 oz) Diced green chilies (undrained)
1 tbsp Cornstarch
1 tbsp Unsalted butter
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/4 tsp Salt (adjust to taste)
Optional toppings: Chopped fresh cilantro, diced tomatoes, or pickled jalapeño slices
Toss the Cheese: In a medium bowl, combine the shredded Monterey Jack, Pepper Jack, and Banana Pepper Jack. Sprinkle the cornstarch over the cheese and toss gently until all the shreds are evenly coated (this prevents the sauce from separating and keeps it silky smooth).
Warm the Base: In a medium saucepan set over medium-low heat, melt the butter. Add the evaporated milk, canned green chilies (with their juices), garlic powder, onion powder, and salt. Bring to a gentle simmer—do not let it boil.
Melt the Cheese: Reduce the heat to low. Add the cornstarch-coated cheese mixture one handful at a time, stirring constantly with a whisk or wooden spoon until fully melted and smooth before adding the next handful.
Adjust & Serve: Continue stirring on low heat for 1–2 minutes until the queso reaches a rich, velvety consistency. If the dip gets too thick, stir in an extra splash of evaporated milk or whole milk. Transfer to a serving bowl, top with optional fresh cilantro, and serve immediately with warm tortilla chips!
